If there's one thing most associated with fall, it's got to be pumpkins ~ pumpkin spice lattes, pumpkin pie, roasted pumpkin seeds, pumpkin cake, pumpkin cookies with cream cheese frosting, pumpkin ice cream...soooo many freakin pumpkins everywhere! 2020 has been anything but predictable, so this fall, do something out of the ordinary and add a bit of bourbon to your favorite pumpkin recipes. A couple tablespoons in pumpkin pie filling, or a splash of bourbon whipped into homemade whipped cream would be phenomenal! No matter what your go-to brand is, those rich undertones of barrel-aged bourbon will really elevate your dish. Of course, every good chef needs a drink in the kitchen while working, so here's a pumpkin cocktail to get this fall started off right. Cheers to pumpkin lovers!
Bourbon Pumpkin Smash Cocktail

1 oz. pumpkin spice syrup
2 oz bourbon
1/4 oz lemon juice
4 oz soda water
pumpkin spice syrup
8 oz. pumpkin puree
1 cup water
1 cup sugar
1/2 tsp. pumpkin pie spice
Instructions
To make the simple syrup, combine puree, water, sugar, and spice in a small sauce pan and bring to a boil stirring constantly. Remove from heat, cover, and let sit 15 minutes. Strain into an airtight container and cool completely before making cocktail. Will last up to a week in the refrigerator.
Fill cocktail shaker with ice. Add pumpkin syrup, bourbon, and lemon juice. Shake well.
Fill rocks glass with ice and strain cocktail over it. Top with soda water and stir once before serving.
**You can rub the edges of a rocks glass with lemon wedge and dip in a cinnamon sugar mixture for a beautiful and tasty presentation!
